Terroir

Fruscìo is born on high-altitude mountain terraces, between 740 and 750 metres above sea level, in a suspended landscape between Monte Baldo and Lake Garda. Here, the vines sink their roots into clay soils rich in limestone, are caressed by constant winds, and benefit from pronounced diurnal temperature shifts. It is an extreme environment, where viticulture becomes truly heroic and the landscape shapes the wine’s identity.

Tasting Notes

Fruscìo shows an intense ruby-red colour. The bouquet reveals vegetal and spicy notes, mountain herbs and woodland aromas, with elegant hints of leather that emerge with aeration. The palate is taut and refined, supported by a moderate alcohol level (13% vol), with supple tannins and a naturally unfolding persistence that leaves a sensation of freshness and depth.

Harvest and Winemaking

The red grapes are hand-selected and sent to vinification after a night of cold storage. The bunches are destemmed with care to preserve the integrity of the berries; after approximately one day, alcoholic fermentation begins at a controlled temperature of 16–18°C. Following about two weeks of skin contact, the wine is drawn off and transferred to stainless steel for a first racking to separate the lees. A second racking follows; in contact with fine lees, the wine undergoes malolactic fermentation at 18–20°C. After completion of fermentation, the wine is aged for one year in used barriques, with bâtonnage performed up to three times a week. After bottling, Fruscìo rests for a further twelve months in bottle before release.

Food Pairings

Fruscìo pairs beautifully with white meats, roasts, dishes based on mushrooms or truffle, and cheeses. Its freshness and moderate alcohol content also make it enjoyable on its own, even without food pairing.
